Here
are two African recipes, one from the south and one from the west, one that's
hot and one that's sweet. SAMOSAS
(Spiced Meaty Pastry) This is a South
African recipe, often served with tea, that feeds eight. 1
lb. Ground Beef 1/4
tsp. Cayenne Pepper (or more if you like it hot) Place
the ground beef in a large bowl and add chopped red peppers, salt, garlic, caraway
seeds, onions, cayenne pepper, cardamon, cinnamon and lemon juice. Mix thoroughly.
On a floured board, knead one cup of flour into the meat at a time until the
whole two pounds is kneaded in. Then form meat-dough balls about the size of
a small meatball and fry on all sides (10-15 minutes per batch) until browned.
Drain on paper towels and serve warm. This recipe
comes from Ghana in western Africa. 1/2 cup Butter
or Margarine 1
and 1/4 cups sifted All-purpose Flour Cream the butter
and sugar together thoroughly. Mix in the coconut, lemon juice and lemon rind.
In a separate bowl, sift together the flour, salt, cream of tartar and baking
soda. Add the beaten egg to the creamed mixture and then mix in the dry ingredients
a little at a time. Mix well to form a soft smooth dough. Turn dough out onto
a well-floured board and roll into thin sheets of dough. Cut into whatever shapes
you wish. Bake on greased cookie sheets for 5 to 7 minutes at 425 degrees. Enjoy!

Cardamon pods (crushed)
6 cloves Garlic (chopped finely) 1
tsp. Cinnamon
2 tsp. Caraway Seeds Juice
of 2 Lemons
1 lb. Onions (chopped finely) 2
lbs. Flour
Salt and Pepper (to taste) Oil
for Frying
COCONUT LEMON COOKIES
1/2 cup Sugar 1/4
tsp. Salt
1/2 cup Grated Coconut
1 tsp. Cream of Tartar
1 tsp. Lemon Juice
1/2 tsp. Soda
1 tsp. Grated Lemon Rind
1 Egg (beaten)
